Applesauce Spice Muffins
Ingredients:
1 cup butter softened
1 cup granulated sugar
1 cup brown sugar
2 eggs
1 teaspoon vanilla
2 cups applesauce
4 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1 teaspoon nutmeg
1 cup chopped walnuts {I omit}

Directions:
Preheat oven to 350 degrees.
Cream butter and sugar.
Add eggs one at a time incorporating well and mix in vanilla.
Stir in the applesauce.
Combine flour, baking soda, salt and spices.
Stir into creamed mixture.
Fold walnuts in.
Fill greased or paper lined muffin cups 3/4 full.
Bake at 350 degrees for 20-25 minutes.
Makes 2 dozen.
Enjoy!

These are a very tasty and not overly sweet muffin.
