Looking for quick and easy breakfast ideas?  These peanut butter and chocolate baked oatmeal muffins are perfect ~ because they are easy, and they are super filling!

Chocolate Peanut Butter Oatmeal Muffins
Ingredients:
4 cups old fashioned rolled oats 
1 teaspoon baking powder 
1/2 teaspoon salt 
1/2 cup mini semisweet chocolate chip 
3 tablespoons peanut butter 
2 cups milk 
1 egg 
1 tablespoon sugar 

Directions:
Preheat oven to 375°F. 
Place liners in a muffin tins. 
Mix oats, baking powder, salt, and chocolate chips in a large bowl. 
In a small mixing bowl, whisk until combined peanut butter, milk, egg, and sugar. 
Add the wet ingredients into the dry ingredients and stir well to combine. 
Fill each muffin well. 
You may need to press down on the mixture a little to get the air pockets out. 
Bake for 30-35 minutes, or until the muffins are golden brown on the top. 
Remove to a cooling rack and cool completely.

Baby love

Several months ago Krystle & Gerard shared their wonderful news with us … and yesterday our church family celebrated with a baby shower for her and Baby Z.

So I'm about to become a grandma ~ well I think I'll be called Gigi... I know, many of you are surprised that someone as young as me is going to be a grandmother. But it’s true! 

To be honest I am excited about becoming a Gigi; and already I feel this thing building inside me that can’t wait to get my hands on that little pumpkin!  I envision rocking that baby to sleep and singing Jesus Loves Me.
I find myself thinking about holding my child’s child and I get all weepy. I remember when she was just a baby…{le sigh} and now here she is all grown up and about to become a mother herself.  I don’t have a clue where all the years went.

New babies are new beginnings. Unimaginable gifts to their parents…but also to their grandparents.  There is going to be such joy when we welcome this little one into the world.

Let the countdown begin!

Who am I?

What do you do? It’s a common enough question. And it seems like the answer should be easy enough. And yet… it doesn’t always feel so simple. Many of us struggle with answering that very question. Especially those of us under 50 and full-time at home.

Every so often, I admit to having a little identity crisis. 

I’m not any one thing, no expert of any one skill. I hold no professional title. I possess no degree in a specific subject. If I were to be listed in the yellow pages, it would be unclear where to place me.

I didn’t go to college. I didn’t spend years studying something for me to do with the rest of my life. I became a mom at 19 years old. Became a mom 2 more times in three more years. Got my high school diploma 10 years later.  I took some classes for computers back when the only time you touched a computer was in a class, or if you were lucky in an office with a computer.

It can be hard to know what our purpose in life is.

Many of us search for understanding of why we are here. We search for our sense of identity. It’s no small thing to understand who we are. Yet, often the world’s definition of our identity can be very different to the real reason that we were made to be here. The world uses our status, our careers, our homes, our looks, our possessions all to define who we are as people. But that’s not what makes me who I am.  I want to live my life being the woman God wants me to be.

God has a plan for my life. He had a plan even before I was born.  I want my life to be about being the woman God wants me to be not about my status {or lack of it}, career {or lack of one}, possessions or my appearance.

The truth is we are more than what we do. We are not just one thing. Which is where the struggle comes in. Some days I feel at peace with who God created me to be and other days, I want to crawl in the nearest hole. I’m easily overwhelmed by the demands of life and constantly battle the inner voice that tells me I’m doing it all wrong. But I’m learning to stop listening to that voice ~ the one that whispers accusations and causes me to doubt what I know is true.

I am “fearfully and wonderfully made.” {Psalm 139:14} I don’t need to fit into any mould to please God.

I’m Anita, a girl who loves to write just because she loves to write.  I’m allergic to popcorn, but I keep eating it because I have zero self control. I click my nails to my teeth when I’m stressed. I’m nearly deaf in my left ear, thanks to a combination of less-than-stellar genes and my affinity for loud rock ‘n roll during my rebellious teen years. I worry near-daily that I’m not giving enough weight to this life, that I’m not doing what I “should” be doing.  I read too much, don’t clean quite as often as I should and drink just the right amount of Zinfandel on the weekends.

These bars are loaded with oatmeal, peanut butter, chocolate chips, and M&M’s.  Who can resist that? I mean, seriously!? 

No Flour Monster Cookie Bars 
Ingredients:
1 cup packed brown sugar 
1 cup granulated sugar 
1/2 cup (1 stick) salted butter, softened 
1 1/2 cups creamy peanut butter 
3 large eggs 
1 tablespoon vanilla extract 
1 1/2 cups quick oats 
2 1/2 cups old-fashioned oats 
1 teaspoon baking soda 
1-2 cups mini M&M's (save some for the top, if desired) 
1 cup mini chocolate chips

Directions:
Heat oven to 350°F. Prepare a cookie sheet by lining it with parchment paper.
In large bowl, combine brown sugar, granulated sugar, peanut butter, and butter. With a hand-held blender, mix until pale in color and combined.
Add the eggs and vanilla extract. Blend together.
Add in the oats and baking soda. With a rubber spatula or wooden spoon, mix until combined.
Add in the chocolate chips and the M&M’s {reserving some for appearance when done cooking, if wanted}. Stir together well until combined.
Dump onto your parchment lined cookie sheet and spread out. This will take several minutes, but it can be done.
Bake for 18-20 minutes. The edges will be lightly browned and the middle will still look pale and underdone, but it will finish baking as it cools. Let cool for at least an hour so the bars can firm up and come together. Do not over-bake!

Autumn

Mornings these days are a little cooler and dusk is upon us before we're ready.

It’s coming!!!

I can feel it in the air.

AutumnIt is by far my most favourite season. The leaves with their gorgeous colours and how they fall and make way for new life. And Tim Horton’s with their Pumpkin Spice Tea! Why is it that you can only get certain drinks in certain seasons?

Oh and the time change! Here we “fall back” on November 1st, which means I get an extra hour of sleep that night. Huzzah!

Even though I’ve been feeling all sorts of exhaustion ~ mentally and physically, I want to look forward with anticipation to all that this new season will bring.
I’ve asked the Lord to give me glimpses of His beauty in the midst of my struggles. I don’t want to miss it. Let us remind ourselves of the hope that comes with the changing of the seasons.

A sweet honey balsamic marinade makes chicken unbelievably tender and juicy. Marinates in half the time for twice the flavour!

Grilled Honey Balsamic Chicken
Chicken Seasoning:
2 lbs chicken breasts boneless and skinless 
1 tsp olive oil 
1/2 tsp salt 
1/4 tsp black pepper 
1/2 tsp paprika 
3/4 tsp onion powder
Honey Balsamic Marinade 
2 tbsp honey 
2 tbsp balsamic vinegar 
2 tbsp ketchup 
1 tsp garlic minced


Directions: 
For the Chicken Seasoning:
Place olive oil, salt, black pepper, paprika, and onion powder in a zip lock bag. Add chicken and toss to coat, covering chicken with spices and oil.
For the Honey Balsamic Marinade:
In a small bowl, whisk together balsamic vinegar, ketchup, garlic, and honey.
Divide the sauce in half. Pour one half in the bag with the chicken and store the other half in a sealed container (or bowl covered in plastic wrap).
Shake bag with chicken so that the meat is covered in the marinade. Seal bag and refrigerate for at least 30 minutes or up to 4 hours. Also store sealed marinade in the refrigerator until ready to use.
Directions:
When ready, remove chicken from ziplock bag. Discard bag and marinade that the chicken soaked in.
Grill your chicken per typical cook time, usually 3-5 minutes per side (or until no longer pink).
While chicken cooks, take the marinade that was stored separately and heat in the microwave for 30-45 seconds.
Once chicken is cooked, drizzle or brush remaining marinade on top. Serve immediately.

Journaling

This past year, I have started journaling my own personal devotional time.
I don’t know about you, but more often than not, as I sit to be quiet with the Lord for my devotional time, my mind gets noisy. I begin to think about the things that are before me that day, and find that I am anxious to get started. As a result, I can find it difficult to focus.

Journaling my devotions helps to keep my mind focused. It also is a great way to record my spiritual journey.  Because I can look back through my devotional journal and be reminded of the highs and lows, the pains and joys, the failures and victories, the tears and laughter, the lessons learned ~ and then learned all over again.  In fact, throughout the day, I even find myself reaching for my journal and read what I had written earlier that day. And as I do, I am reminded, and again encouraged.

In this digital world, journaling seems… well, kinda slow.

Journaling is work. Without a doubt, it takes effort.  That doesn’t mean I always feel like journaling my devotions ~ but when I do, my heart is filled with awe and thanksgiving.

I want to encourage you even if you are not the “journaling type” ~ just try it.  It will help you focus in the moment and perhaps help you to remember it better throughout the day.

Salsa Queens

We’ve been making salsa for several years now.  Our first year was awesome.  The second year abundant. So much so, that our third year we abandoned making any.  By our fourth year, we were amazing. And last year, well last year, we aced it.

We are now Salsa Queens…
We are the Salsa Queens, young and sweet, mincing garlic cloves

We can chop, we can stir, having the time of our lives

Using the same recipe as before, we scalded, peeled, chopped, minced, stirred, poured and sealed, until our fingers were numb, our eyes tired, our feet were sore and the house smelled of the most delicious salsa around.

Back to ... bus, the books and routine

Back to school for him
means back to routine for me.

As September rolls in and summer fades away, it’s time for me to get back to routine. No more lazy days of summer.  This is the time of year when even those of us who aren’t returning to school are more than ready to establish routine back into our lives.

Routine described as a sequence of actions regularly followed; a fixed program.

There is nothing more satisfying to this Type “A” girl than a series of neat, orderly to-do lists checked off.  The drawback of being a list maker is that, often, life does not organize itself neatly around my list…

Because, let’s face it, 
life is full of distractions.

With the always-on technologies of today, it can make being productive extremely difficult.  I worry about my growing inability to avoid checking Facebook, Instagram, Pinterest or blogs that I follow.

Sadly, I am guilty of it, a time or two, or three or ten. Maybe we all are?? 

Too often I’ve set out to do a specific task, only to find myself minutes later doing something completely different  Sadly, distracted living is a way of life for many of us, and we may not even realize it.

Let’s begin friends, at the start of this new school year, to live our lives with a little more focus. With a healthy routine of tasks to compete each day but to also allow for those spontaneous moments to occur; where we are present in each moment, and fully attentive to those around us. Sure, we might get less done; but that‘s okay!

Having a regular routine can be essential to balancing the home, work schedules and personal time . Just knowing that I have a schedule in place for the day, the week, or even the whole month can make me feel calmer and more in control of whatever tasks that are needed to be completed.

If you're looking for a super easy and great tasting pizza dough? This is it! It's quick, it's easy, and it's delicious!

Perfect Parmesan Pizza Dough
Ingredients:
5 cups flour, divided 
1 cup Kraft 100% Parmesan Grated Cheese 
1 tsp. quick-rise instant yeast 
1/2 tsp. salt 
2 cups cold water 
1/4 cup olive oil 
Directions:
Mix 4 cups flour, Parmesan, yeast and salt in large bowl. Add water and oil; stir until mixture forms soft dough. Knead on lightly floured surface 5 min. or until smooth and elastic, gradually adding remaining flour.
Cut dough into 4 pieces. (Each piece is enough for a 12-inch pizza.) Spray each piece with cooking spray. If using immediately, cover desired number of dough pieces loosely with plastic wrap; let stand 15 min.
Place each remaining dough piece in separate resealable freezer-weight plastic bag that has been sprayed with cooking spray. Seal bags; refrigerate up to 2 days or freeze up to 3 months.

29th Anniversary

We're celebrating  our 29th wedding anniversary ~ today.
I've written herehere, here, here, here, here, here, here, and here about us, our journey and a few of the celebrations.

It's been an amazing journey so far, filled with many ups and few downs. We've had our times of better or worse, richer or poorer, sickness and health,  but one thing we both continue to strive for is to live by is 1 Corinthians 13: 4 - 8.
Looking forward to spending the rest of our lives together.
