Slow Cooking Goodness

Part of my favourite fall thing is to bring out the crock-pot and have the super delicious and usually quite easy dinner meals.

Here are a few of my fave's.

Potato & Ham Chowder
Ingredients: 1 box (4.7 oz) Betty Crocker™ scalloped potatoes 1 cup diced fully cooked ham 4 cups chicken broth 2 medium stalks celery, chopped (1 cup) 1 medium onion, chopped (1/2 cup) ⅛ teaspoon pepper 2 cups half-and-half ⅓ cup all-purpose flour Directions: Mix Potatoes, Sauce mix from potatoes, ham, broth, celery, onion and pepper in 3 1/2- to 4-quart slow cooker. Cover and cook on low heat setting 7 hours. Mix half-and-half and flour. Gradually stir half-and-half mixture into chowder until blended. Cover and cook on low heat setting 1 hour, stirring occasionally, until thickened and vegetables are tender.


Sweet & Spicy Meat Balls
Ingredients:

1 (32-ounce) bag frozen fully cooked meatballs (about 50)
1 (18-ounce) jar grape jelly 1 (18-ounce) BBQ sauce Directions: Combine the grape jelly and BBQ sauce in a small bowl or in the base of your slow cooker. Add meatballs and stir until they are coated with the sauce. Cook on high for 2 to 3 hours. Hash Brown Casserole
Ingredients:
1 large package of frozen hash browns (about 2 lbs or 1 kg)
1 can cheddar cheese soup 2 cups sour cream 1 onion, minced 2 cups grated cheddar cheese ½ tsp salt ½ tsp pepper Directions: Mix all ingredients together and place in Crock Pot slow cooker. Cook on low for 5-6 hours.
