Salsa Making 101

First you start with the best recipe

Aunt Ginny's Salsa
8 cups peeled, chopped tomatoes {scald in boiling water for 10 seconds, put in cold water and peel}
1 cup each chopped green and yellow pepper
6 jalepeno peppers, no seeds
2 jalepeno pepperss, with seeds
2 cups chopped cooking onion
3-4 cloves of minced garlic
Mix together and add
3/4 cup vinegar
2 Tbsp salt
2 Tbsp basil
3/4 tsp pepper
3/4 Tbsp parsley
3/4 Tbsp sugar
Combine and cook uncovered for 1 - 1 1/2 hours until thickened.
Remove from heat and stir in 2 samll tins of tomato paste.
Pour into jars and seal.

then find an amazing partner...
I,  we find it difficult to convert bushels to cups, and even how many cups you'll get from 1 pepper and such, so we bought ...

1/2 bushel of tomatoes
9 large green peppers
9 medium yellow peppers
6 large cooking onions
60 jalepeno peppers

and we kinda guessed that from that we would get 10 "batches".

After we spent over two hours chopping all the vegetables, and dividing them into cooking pots, we quickly realized that we would only get 7 batches and so, we then had to adapt the recipe to what we had bought...

then make up your own recipe:
6 cups tomatoes
2 cups green peppers
1 cup yellow peppers
2 1/4 cups onions
1 1/2 cups jalepeno peppers {all with seeds}....
5 - 6 cloves of minced garlic

everything else we followed to the letter, well except we didn't add the sugar, but other than that... and you know what?, it turned out quite good.

And that my friends is how you make salsa!
