This fabulous recipe makes enjoying the classically Canadian flavour of butter tarts easier than ever....

Butter tart Squares

Ingredients:
1 cup all-purpose flour
2 tablespoons confectioner's icing sugar, sifted
1/3 cup cold butter, cut in chunks
2 eggs
1/4 cup butter, melted
1 tablespoon vinegar
1 teaspoon vanilla
1 cup raisins
Directions:
Preheat oven to 350F. Grease a 9-inch square baking pan. Set aside.
To Prepare Crust:
Combine flour, icing sugar and butter in a food processor fitted with a metal blade and process until crumbly, about 20 seconds. Press into prepared pan. Bake for 10 minutes or until light golden.
To Prepare Topping:
Combine eggs, brown sugar, butter, vinegar and vanilla in a mixing bowl. Beat just until blended. Stir in raisins. Pour over crust.
Bake for 25 to 30 minutes longer or until set and browned. Cool completely in pan on rack, then cut into squares.
